LucyLou’s Treats..
Note: I am not a professional cook and this could be the reason for so many details that may seem like they are not necessary..but,,, I use......
½ can of just pumpkin (I get 15oz.cans) (not pumpkin filling)
2 large spoons of Jiffy Peanut butter (peanut butter can not contain xylitol sweeter-toxic to animals) I use a serving spoon. (I don't try to be exact) our buddies all like a little extra peanut butter.
1 egg (I made a batch with out an egg and it was a very dry batch so I added another spoon of peanut butter to hold it together.
2 table spoons of Coconut liquid Oil.
1 teaspoon of cinnamon mixed in 2 cups of whole wheat flower
Mix the wets together real good and then add flower till all is mixed well. I use a stainless steel bowl. I use an old style electric hand mixer (easier to clean up, than the pretty green Kitchen Aid Mixer on the counter). Once all the ingredients are mixed in a bowl I use my hand in the bowl to combine all the small pieces into one clump of dough. I take the clump out and knead it on the stone until its all one ball of dough.(I use a Pamper Chef stone, no flour needed since dough doesn't stick to it) I quarter it and roll it out flat to about the thickness of 2 nickels or less and I cut them with a hard plastic pizza slice server into long strips and then place the strips on the non stick trays I will cut them into squares or rectangles (size of 2 stamps end to end) on the trays. (I fill up the big flat tray of 12x19 and a little smaller one like 11x15 from this batch). Preheat oven to 350 and I cook them for 25 minutes. If you make a thinner cookie it will take less cooking time and according to thickness could be more., I always watch them in the last 5-8 minutes to make sure I don't burn them. I cook long enough for LucyLou where she likes them crunchy but she'll eat them soft also. When finished I dump them off the trays still hot, and they don't stick, on to a paper towel until they cool down, then I put them in a plastic (retired store treat container). I make sure they are 100% cooled, because the first batch I made I put them in the plastic container and they were a little warm and once the lid was placed on, moisture formed inside the container. If the treats are warm and moisture forms inside the container it is a breeding ground for mold. Let them cool down completely then put them in a sealed container and these treats last about 2 weeks. Probably putting them in refrigerator will make them last even longer. I have frozen them before to stock pile.
The last batch I made, I used the remaining can of pumpkin and it looked a little less than a ½ can and when I went to knead the dough on the stone, the dough was a little harder and dryer, normally when all goes right, the dough is soft but not sticky, but......Lucy Lou still loves them no matter how they are made....enjoy...and as a salute to LucyLou….I eat one myself……go ahead…try one.. :)
NOTE: I started using Jiffy peanut butter, then went to a Dog type peanut butter ($13.00 per small container) then I switched to an all natural peanut butter, no sugar or salted added, plus its cheaper and I think it will be better for our buddies.
NOTE: Of the 3 flours I have tried…Oats,GMO free and whole wheat….I have decided to use the whole wheat. Reason is the Oats and GMO free when using the regular 2 cups for the batch, its not enough and leaves the dough too sticky to work with and more flour has to be added (1/2 cup to 1 cup) and the whole wheat works perfect and either flower used I am sure your little angel will still love them. I found out that cats like the treats as well…thanks….Jim Ed Brown…2023
