Lucy Lou's Treat Receipt

I am like my father, I can take one word and turn it into a story, hopefully you won't mind this story. This is the way I do it and its a beginning to your own receipt and treat making adventure.

Take  ½ can of just pumpkin (I get 15oz.cans) (not pumpkin filling) and put it in your mixing bowl.
2 large spoons of Natural Peanut Butter (peanut butter can not contain Xylitol sweeter-toxic to animals) I use a serving spoon. (I don't try to be exact) our buddies all like a little extra peanut butter.
1 egg 
2 table spoons of Organic Coconut liquid Oil.
1 teaspoon of cinnamon mixed in 2 cups of Organic All Purpose flower.

Mix the wets together real good till a saucy, same color mix ( I am using an old hand mixer that has 2 beaters) and then start adding your flower mix till all is mixed well with the wet ingredient. I use a stainless steel bowl and once all the ingredients are mixed in a bowl I use my hand in the bowl to combine all the small pieces into one clump of dough goodie. I then take the clump out and knead it on the stone until its all one ball of dough.(I use a Pamper Chef stone, no flour needed since dough doesn't stick to it) I quarter it and roll it out flat to about the thickness of 2 nickels or less and I cut them with a hard plastic pizza slice server into long strips and then place the strips on the non stick trays I will cut them into squares or rectangles (size of 2 stamps end to end) on the trays. (I fill up the big flat tray of 12x19 and a little smaller one like 11x15 from this batch). Preheat oven to 350 and I cook them from 20- 25 minutes. If you make a thinner cookie it will take less cooking time and according to thickness could be more., I always watch them in the last 5-8 minutes to make sure I don't burn them. When finished I dump them off the trays still hot, and they don't stick, on to a paper towel until they cool down, then I put them in a plastic (retired store treat container). I make sure they are 100% cooled, because the first batch I made I put them in the plastic container and they were a little warm and once the lid was placed on, moisture formed inside the container. If the treats are warm and moisture forms inside the container it is a breeding ground for mold. Let them cool down completely then put them in a sealed container and these treats last about 2 to 3 weeks. Probably putting them in refrigerator will make them last even longer. I have even frozen them before to stock pile.
The last batch I made, I used the remaining can of pumpkin and it looked a little less than a ½ can and when I went to knead the dough on the stone, the dough was a little harder and dryer, normally when all goes right, the dough is soft but not sticky.  

NOTE: The indigents in the photo are the ones I use. When I first started I tried different flours and peanut butters and ordered them through the mail but have fine tuned it to where I can find better ingredients from the local stores. I did try oat meal and whole wheat flour and GMO free and the Organic makes the treats crunchier and I would think better for them. I also tried different peanut butter's ( again none with Xylitol ) until I found the all Natural 100% peanut butter. Not all of our angels will love these treats and they are allowed to be finicky but if you have a favor receipt that they will eat, send me a copy.  Also let me know if you come up with a easier way to make these treats cause I am always open to improvement......thank you ...Jim Ed Brown 2023
